Enjoy with us in a Cheese master class on the farm takes place in a little and familiar dairy in the Hyblaean highlands in the south-east of Sicily.
With me and my friends you can live the experience of milking cows, feeding the calves and then … making ricotta or other cheeses with fresh milk.
Let’s start with a visit to the farm where milking and meat cows are bred along with goats and pigs.
Form Master Class participants learn the milking process and help produce cheeses.
The day continues with a rich and delicious tasting of cheeses, fresh warm ricotta, sausages and cold cuts all produced on the farm along with scalded (closed Sicilian pizza), cassatelle, bread, fresh pasta, meat and excellent local wine all produced by theirselves in the factory.
Between October and November, the day can continue with a visit to a oil-mill where, in the fall, some of the best extravirgin olive oils in the world are produced. You can watch the whole process. Obviously the visit would not be complete without a tasting of extravergin olive oil and fresh bread. For info on all the details and prices contact me by email or live chat.
